I have earned a new title here at work. I am now the “Queen of the Freezer”. Now that doesn’t mean that I am like an ice queen, but I have just discovered using zip lock freezer bags is a brilliant way to freeze food.
Maybe everyone has been doing this forever, but it has only come to me recently. I flatten the bag of whatever as much as possible, so it takes up little room in the freezer and has the added advantage of thawing quickly. I do soups, stews, portions of vegetables, sauces, portions of rice almost everything this way and I now love my freezer. It is tidy and I can put my hand on what I want immediately.
I made some tomato sauce here at work and froze it in my new way and had it ready to bring home. Jason, our chef, needed to do a portion of vegetarian lasagne one-day last week. I was amazed at how quickly he had it made as a good tomato base takes a long time to cook. I asked him how he got it done. He proudly informed me that he used one of MY sauce packs and it defrosted in 30 seconds. I needn’t tell you I now know to bring my own stuff home quickly!!!!!
